A simple, basic, frugal oatmeal cookie. (Frugal is good and sometimes oatmeal is best.)
½ cup shortening
½ cup granulated sugar
½ cup brown sugar, packed
1 large egg
2 Tbs water
½ tsp vanilla extract
1 cup all-purpose flour
½ tsp baking soda
½ tsp salt
1 ½ cup old-fashioned, rolled oats
1 cup raisins (optional)
Directions:
Preheat oven to 350 degrees Fahrenheit.
In large bowl, mix shortening, sugars, egg, water and vanilla extract together until creamy. Add in the flour, baking soda, and salt and mix well. Mix in the rolled oats. Stir in the raisins, if desired. Drop by teaspoonfuls onto a greased cookie sheet. Bake 10-12 minutes or just until done. Remove from cookie sheet and cool on wire rack. Store in an airtight container. Makes about 2 dozen cookies.
